Zafririm Winery is a boutique winery owned and run by Lori and Shaike Lender on Moshav Zafririm, in the Judean Hills. We opened the winery, situated on the family property, in 2004 and today produce more than 7000 bottles of red wine annually, mostly blends, and as of 2014, a crisp rosé.
We came to winemaking from the fields of archaeology and the fine arts. Our connection to and love of the country and our region in particular are imparted in the names of the wines we make—named after the ancient ruins of villages from the times of the Second Temple and Roman and Byzantine periods located close to the vineyards.
We enjoy receiving guests and sharing our knowledge, the sights, smells and tastes—wine connects.
At Zafririm Winery, we see the winemaker as a vehicle through which the grapes, in their transformation into wine, realize their full potential.

The beginning of this journey into the bottle begins in the vineyards, planted near the winery and in the valleys of Nahal Hakhlil and Nahal Ha-Ela, close to Moshav Zafririm. The grapes are handpicked before dawn, to ensure that the fruit remains fresh and cool.
Rolling hills reaching 350–400 m asl and narrow valleys between them filled with soil rich in alluvium and limestone create a unique terroir. Winter nights are frosty—temperatures descend to between -3 and -8 degrees Celsius—and summers are dry, with substantial temperature differentials between day and night. The combination of soil, frost and climate do well to the grapes that grow in these valleys, and indeed, the region’s vineyards are known for the high quality of their fruit.
The location of the vineyards, the unique terroir and excellent natural features find expression in the tastes and aromas of our wines. The winery is situated on the family property, which enables us to give the wine our full attention.
For us, it is of prime importance that, as in the ‘Old World’, Zafririm wines are an expression of ‘place’, and that they belong to the appellation Judean Hills.
